Baked Oatmeal - Pumpkin Style

It sounded like a good idea at the time and perfect for the start of autumn. This Baked Pumpkin Oatmel had potential, but fell short of the mark. Perhaps it needed more seasoning, chocolate chips, more caramel flavor, or maybe even a little salt, but it was just blah and the texture was gummy. Leftovers this morning were better with some butter and Pampered Chef Sweet Caramel Sprinkles on top. I followed the recipe as written, but used actual sugar instead of artificial sweetener and even threw in some toasted pecans. Alas, there's 2/3 of a 9x13 pan left at our house, and I have a feeling not all of it will be eaten.
