Tonight's menu included pork fajitas and Spanish rice. I was sure that a month or two ago I had picked up a rice mix for the Spanish rice so I planned to use that. When it came time to make the rice, I couldn't find the mix and I was really getting close to dinner. So, I quickly Googled Spanish rice recipes and here's the recipe for Easy Spanish Rice that I found and made. It was pretty fast and easy and used up more green pepper (the whole goal of tonight's dinner was to use some of my peppers!).
P.S. Found something new for topping fajitas. I forgot to buy sour cream at the store (it was a forgetful kind of day I guess) so made do with French Onion dip. It was terrific!
