Curried Beef Pita Pockets

Since the summer vegetables have been so late we're just now really getting started, but I liked the idea of this recipe for Curried Beef Pita Pockets from Taste of Home to start using zucchini and tomatoes. I actually followed the recipe as written on this one! It was good and I really liked that way the zucchini and tomato cut down on the spice of the curry. Make sure not to cook the zucchini and tomato, just warm them. The slight crunch of the zucchini was a nice contrast to the ground beef and onions.
