My menu plan commitment has been a little lax this month, but I decided to stick with the game plan for tonight. This is a recipe I saved from a Simple and Delicious magazine. I don't remember how long ago it was published, though. It was an easy dish, even with my substitutions and I think I'll make it again some time. The original recipe for is here. My substitutions were these: I started with some frozen grilled chicken that was marinated in teriyaki sauce before I grilled it, then instead of the applesauce, I just sauteed one coarsely chopped apple. Everything else was the same.
