Once in a great while I'm making an effort to really push our boundaries for dinner. This recipe for Cheesy Mushroom Bread Pudding is one of those attempts. Mushrooms have really started to grow in appeal for me. Historically I've not been too keen on mushrooms, mostly because of texture issues. I decided to go ahead with this recipe, though, in part because my Dad was coming for dinner and he loves mushrooms.
In the end, Dad couldn't come for dinner and we're stuck with a lot of Mushroom Bread Pudding that we don't really care for. It wasn't bad, but my texture issues returned a little with the bread pudding and mushroom together. I might try a savory bread pudding in the future, but there will probably be more cheese and meat and fewer mushrooms.
