Today was tacos in pizza form. I used enchilada sauce instead of tomato sauce for the base, ground beef seasoned with taco seasoning and then the Mexican combo shredded cheese on the top. It used up leftover taco meat from the freezer and went together pretty quickly. We had grapes as a side and hot fudge sundaes for dessert. Yummo.
