October starts this week, and even though it will be a busy month--a certain little someone at our house turns eight--I'm ready! At least when it comes to eating.

Birthday Smackdown

Selecting a birthday treat for my husband is always a challenge. Over the years we've done variations of his favorite things--chocolate, peanut butter, toffee, coconut, bacon--and more than once we've combined a few things. He has a sweet tooth, and he give anything with sugar a whirl, so it's more the difficulty of making the selection, rather than difficulty making him happy. For this year's selection, I went with Maple Bacon Chocolate Smackdown. The pie is the consistency of pecan pie, but the filling is quite different. There's a healthy dose of bacon, plus walnuts, maple syrup, and chocolate chips (I used a combo of dark and semi-sweet). It's a relatively easy pie to make, especially if you purchase the crust like I did. From there, you make the filling and stir all the other things in. Easy. Peasy. We all enjoyed the salty flavor of the bacon against the sweet other flavors. My daughter said it tasted like chocolate chip pancakes with bacon on the side. Al

Monsters In My Kitchen

For years now, we've loved to celebrate Halloween with spooky treats of all kinds. This year we enjoyed a "charBOOterie" board that included these Halloween Monster Cookies . These monster cookies were more monster eyes than peanut butter, but they were so lovely and chocolatey. I'm sure part of it was the amazing Dutch processed cocoa from Costco, but also the fact that there's a healthy amount. These are pretty easy cookie to make, and no planning ahead necessary since you use melted butter. Even though the dough is a little sticky, it was easy to handle when adding the sprinkles and eyeballs. We all enjoyed these cookies and their hefty dose of chocolate. They were soft and chewy with just a little crispy edge, which is my preference. It was a fun addition to our other snacks, and I would definitely make them again.

Twofer

For an easy night of crockpot cooking, look no further than this Honey Sesame Chicken . Start a second crock of rice, and you're all set. This is super easy to throw together and run out the door to wherever you need to be. I chose to use chicken breasts and regular soy sauce. I cut the red pepper flakes down to just a sprinkle. I wanted enough to cut the sweet, but not enough to really feel heat. Then dessert brought us this tasty number: Caramel Apple Pie Poke Cake . This is another super easy to toss together cake that turns out so sweetly delicious. The caramel apple flavor is excellent, and a perfect fall treat. (And so good, it turns out, that I forgot to get a picture of it. Oops.)
