An Easy, Portable Breakfast

It seems like I've made a lot of breakfast foods lately, but so far I'm not tired of those recipes, so I'll keep it up, I guess.

I made these Sausage Muffins for our main meal of the day, but I think they would be excellently suited to a portable, filling breakfast. They were a little dry, so I think you could add another egg, or maybe a little more cheese to break up the "breadiness". These are very tasty, and could be highly customized with your favorite breakfast foods--ham, bacon, whatever. 

This recipe made about 10 sizeable muffins using my large scoop (the same size I use for cupcakes). You could make these on the weekend, and have breakfast throughout the workweek, easy peasy.
