Coconut Chicken with Apricot Sauce

As soon as I spied this Coconut Chicken with Apricot Sauce I knew I had to try it. I did briefly have second thoughts as I actually read through the recipe and found out it involved breading, but I decided to suck it up and get my hands gooey.

The coating on this chicken smelled amazing while it was cooking, and tasted just as good. The thought of garlic powder with coconut is not something I would have ever put together, but it was good. The apricot sauce was a very nice addition. I am still pondering how necessary it actually is, but make it just in case.

I don't have a lot to say about this recipe, because for once, I followed the instructions. It was delicious and a nice light dish for early spring.
