Weeknight dinners are a challenge. Even though I've been doing the 30 minute dinner after work routine for many years now, it's still a big task to find new recipes that are yummy and fit into post-work parameters. Can't have too many steps, short cooking time, doesn't rely too heavily on pre-prepared items, these are all major constraints.
Which is why, finding a winner is still something worth celebrating. This Italian Beef and Rice Skillet was cozy and tasty for a raw November night. I love that the ingredients are all pretty ordinary, but put together in a new delicious way. This smells amazing while it's cooking, and lives up to the smells when it comes time to dig in. I swapped in frozen green beans for the peas and carrots, and was really happy with that choice.
I'll definitely be keeping this around for future menus. I think it has potential as a crockpot dish, and could be changed up with different veggies and/or pasta. Plus, it's pretty, and pretty delicious too.
