Shrimply Delicious

Summer cooking demands lighter foods, and these Shrimp and Pineapple Kabobs are perfect for hot, sunny days.

The marinade is simple and adds amazing flavor to both the shrimp and the pineapple.  The nice thing about marinating shrimp is that it happens pretty quickly, perfect for busy nights.  I used medium shrimp since that's what I had in the freezer already, but I think the large size recommended by the original poster would be a better match of cooking time to the pineapple pieces.  Not a big deal, though, if the medium is all you have on hand as well.

I loved this recipe, and could see using this marinade on chicken or pork too.  You could even use the leftovers for some amazing and fun tacos.
