I liked the sound of these Slow Cooker Cheesy Mushroom Meatballs. They were hearty enough as an entree, but had some of the elements of an appetizer for a little change of pace.
As it turns out, they were good. Not to die for good, but good nonetheless. They might fit the bill on a colder night when I'm in search of comfort food. Although we had a very mild summer day for Central Illinois, they still seemed a bit heavy. The little bit of penne pasta I cooked and added in the last few minutes didn't help that feeling either.
The best part of these meatballs was how easy it was to get them ready in hurry. I tossed the ingredients together (a half recipe worth and using shredded cheddar cheese in place of Velveeta) just as we were getting ready to walk out the door.
