I'm guessing there's not a more basic food than chicken and rice casserole. It's comforting, it's homey, it's the dish you take to someone who's ill or just had a baby. Generally speaking, chicken and rice casserole is not remarkable, but neither is it offensive, it's just good.
And now I've found a better version. This Cream and Cheesy Chicken and Rice Casserole is like midwestern potluck risotto. It's so creamy and fully of flavor, but nothing bland or boring. The ingredients are not exotic, but the whole dish together is just so good. In typical weird-breakfast eater fashion, we're even enjoying the leftovers as our breakfast. 😉
