Breakfast casseroles are yummy. Something about the combo of eggs, cheese, and breakfast meat, is always delicious. So often, though, they take an overnight of prep. Not great on a short timeline.
Lucky for me, I found this Easy Cheesy Breakfast Casserole, that also managed to use up quite a bit of the potatoes O'Brien I overbought. Although the recipe doesn't call for potatoes O'Brien, it's the perfect substitute! I browned the sausage, and then as it was almost done, added in my potatoes. Then I stirred in the cheese and added the egg mixture. It eliminated one step and worked perfectly.
This recipe was a winner with my family. So much so, that they didn't notice it wasn't what was on the menu. Shhhhhhhhhh. 😜
