Today we celebrated our crazy Gloria's first year. Not sure I ever expected to be in the "celebrate the dog's birthday" crowd, but here we are, and we tried to do it up right.
I've had this recipe for Chicken Gloria pinned forever, and this seemed like the perfect time to use it. Since Thursdays are tight on time for me, I fried the chicken and made the sauce on Monday, and then refrigerated it until today. It worked perfectly to just add the cheese slices and slide it in the oven today. This was a hit with the family, even if I did have to listen to their awful jokes about the dog being in the meal. We all enjoyed it.
