The end of this fall semester has been jam-packed.  Meals have been basic, from the freezer, or out.  No time to try new things or even really think about it.  The end is in sight for school, and, of course, holiday festivities are beginning, so that might yield a few new recipes.

I did have a few extra minutes to try this Baked Garlic Cheddar Chicken last week.  I used chicken tenderloins instead of flattening chicken breasts to save some time in prep, but still have them bake quickly.  We liked them, but frankly, I don't think there's anything terribly remarkable about them.  Not that I don't recommend trying them, but what you'll get is safe and predictable, nourishing and satisfying, without being earth-shattering.  Your call.
