Hunker Down

We are getting our first snow for this season, and the weather today was perfect for the cozy Chicken Salad Pie on my menu.


This recipe is more labor intensive than I'd normally undertake on a regular day, but I was able to put the mixture together in the morning before leaving for work, and then assembling later in the day.  Truth be told, the smell in my house from the morning prep work made me really look forward to dinner later.  It turned out well, mostly just a fancier version of hot chicken salad, which I've made before.


The last minute addition to the meal turned out to be the highlight--Cheesecakesadillas.  Yep, you read that right, cheesecake in a quesadilla.  El yummo.  There's really no mystery here, just cream cheese, sugar, and vanilla in the normal quesadilla format.  I added a little fruit syrup from strawberries I had in the freezer.  We all liked them better plain, so I'd advise skipping the extra work!

I have never heard of cheesecakesadillas. However, they sound and good delicious! I love cheesecake and these look so much easier than the prep that goes into making cheesecake from scratch. I might have to try these over thanksgiving break.

The cheesecakesadillas sound interesting. To be honest, it freaks me out a little, but I also want to try them. I have about 3827 quesadilla things from AMA last week, so I need more recipes for them before they go bad. And I'm kinda sick of tacos.
I bet these would be good fried..
