More Verde to Love


Salsa verde seems to be a flavor we all love and can manage when it comes to spice.  This Salsa Verde Chicken and Rice Bake fits right in that category.  Excellent flavor, simple ingredients, and ultimately a nice, comforting dish after a long day.

I followed all the instructions on this one, except choosing instant brown rice over white.  The mixture was very creamy, and remained that way all through the baking process.  The biggest downside to this recipe is the number of dishes that get dirty while you're making it.  No one step is too difficult, but you know me, I don't want to do more dishes than I have to.  One more strange thing about this recipe?  The "splash" of salsa verde on top.  I guess it adds some color, but seems unnecessary.
