So these Quick Creamy Salsa Chicken Burritos are not much to look at, but you will hardly notice. You'll be too busy stuffing your face with their yummyness to take note of the sort of blah look.
These are pretty simple to assemble. I took the previous blogger's suggestion and used salsa verde. I love it's mild flavor, and I can usually trust it to be tolerable to the uber-sensitive palate of our youngest family member. I used a combination of mild and sharp cheddar cheese, and instant brown rice.
And more than anything, I'm really looking forward to eating the leftovers for lunch tomorrow.
