Somewhere along the way I found some mint M&Ms and threw them in the shopping cart in preparation for St. Patrick's Day. These Double Chocolate M&M Cookies seemed like a perfect way to use them.
These are super easy to put together, and the chocolatey flavor is so delicious. There's a wee bit of saltiness from the butter that comes through and it's the perfect foil to the richness of the chocolate.
I would totally make these again and just leave out the M&Ms, they are that good. Or, perhaps, I'll try the peanut butter kind next time. Hmmmm, the white chocolate would be nice too. Well, it's safe to say I'll be making them again.
