This is on of those recipes that is ALL over Pinterest. Of course I wanted to try it too! However, recent "get in shape" efforts have made baking a little less fun--what's the point of making something having half a recipe go to waste?
These cupcakes seemed worthy, though, because I knew they would be lower in calories and since we already had plans with the neighbors, there was a built in sharing opportunity.
These are so moist! I topped them with cream cheese frosting and enjoyed every bit. Now, I wonder if it works with cake mixes other than yellow? You know I'll find out!
