Pecan pie is a favorite around here. We're game to try about any variety--pie, bars, muffins-- anywhere. These Pecan Pie Cookies therefore captured my attention.
Despite all the baking I did over the last two weeks, it took awhile for me to get around to making these. I have no idea why. I was determined to make them and yet they kept getting shoved aside for something else. Perhaps I thought they would be labor intensive.
They totally aren't! These are so easy to make and absolutely awesome. You can be sure I won't be waiting until next Christmas to make these. They are perfect for any occasion. In fact, I'll be thinking up some new occasions so that I can make these more often.
