Most of July I've been sticking with simple, familiar recipes. I didn't have a lot to report to the blogosphere. And now suddenly, two new recipes two nights in a row!
These Chicken and Potato Pancakes have been on the menu before, but I didn't end up making them for some reason. It's a shame I didn't--these are good! They are definitely not a breakfast pancake, but the flavors work together very well. I was actually surprised how well the cheese, potato and onion all blended. Only the chicken taste was distinct. Another time I might try a sharper cheddar to see if a stronger cheese flavor comes through.
I didn't make the suggested gravy. Instead I just used a country gravy mix made with a combination of chicken broth and milk. (It's what I get for not closely reading the recipe before I shopped!) I didn't even use the gravy, just butter. My daughter and husband both really liked it, though. Next time I think I'll try the gravy the recipe recommends just to see how it is.
