I was in the mood for fresh cookies. I wanted a new kind. I remembered having coconut oatmeal cookies at school that were delicious and went in search of a recipe online.

I followed the recipe exactly (although don't make the mistake I almost did and forget to add both butter and shortening--who separates those two in a recipe anyway?). They're sweet and yummy and perfect to share with the neighbors on the back porch on a summer evening.
Update: I just remembered, I added 1/2 tsp of salt. Cookies always taste better with a little salt. You could probably add a full teaspoon with no problem.
