My dear little girlie will be four on Sunday. For her party I am planning a Purple and Popcorn theme--she loves popcorn and purple is one of her favorite colors.
To keep in theme, I decided that popcorn chicken would be a good main dish and what kid doesn't enjoy breaded chicken dipped in ranch dressing? Since I'll be making the birthday dinner for some family members, I decided a test run would be in order. All of a sudden I was running out of time to test, so Popcorn Chicken was on the menu plan for last night.
In a word? Disappointed.
The best thing about this dish was the ranch dressing into which I dipped each bite. I think this recipe needs more seasoning and more breading, but I'm not going to try again to discover the problem.
