Leftovers

Although I only cooked and mashed two sweet potatoes for our Tuesday dinner last week, I ended up with a huge quantity left over. Luckily, there are many creative folks online who have found ways to use mashed sweet potatoes. For our Saturday breakfast I used Paula Deen's Sweet Potato Biscuit recipe. It's terribly easy and my sweet potatoes were so moist I didn't even have to add milk to the batter. Then on Sunday, as a treat for our Sunday School class, I made this recipe for Sweet Potato Bread from All Recipes. Because I had added some pecans to the potatoes when I fixed them as a side dish, I just incorporated them into both recipes and it didn't seem to make a difference. What a relief to find something to do with all the extras!
