Once again my veggie coop is forcing me to get creative. Since my sister was on vacation last week, I got the full share of our veggies. That's a lot of veggies for a family of three so I started looking for ways to use them in recipes other than veggie side dishes. I made the zucchini (some of it anyway) into a couple of loaves of zucchini bread. Then I started browsing All Recipes for some new recipes for beets and came up with this recipe for Beet Surprise Cake. It was a good, moist, chocolate cake with a lot of depth to the flavor. Instead of making the frosting in the recipe, I just combined 8 ounces of cream cheese with a can of vanilla frosting.
