Lucky Leftovers

I had some leftover Italian beef to use tonight, but I didn't want to do the traditional sandwiches. Instead, I sauteed some onions and then added the leftover Italian beef and juice. At the same time I made whole wheat penne pasta and separately a provolone cheese sauce. At the end I layered them together on our plates. A great new creation! We had apples with cinnamon and brown sugar sprinkled on top as a side. Strawberry shortcake for dessert. Not too shabby for a Monday with a sick little one clinging to my side!
