Orzo Fun

I had purchased orzo for another recipe, and there was half a box sitting in the cupboard. When planning our menu for this month, I decided to search for some way to use it. I like orzo and the fact that it is small like rice with the texture and flavor of pasta. This High Protein Chicken Orzo seemed like a good choice for yummy protein and a good dash of veggies too.

I started with pre-cooked, shredded chicken I had on hand in the freezer, just to save a step. While I was making the rest of the dish, I seasoned the chicken and let it warm up a bit. I also decided to go with frozen green beans rather than asparagus, just because we like them better. While the pasta was cooking, I steamed the green beans in the microwave. Otherwise, I pretty much followed the recipe as is, save for a heavy hand with the Parmesan.

This was a tasty dish that is creamy but not heavy. I'd suggest adding a bit of salt, since the pasta doesn't get any salt of it's own, but otherwise, it's great. It also was terrific for getting our greens in a yummy way.

That looks delicious! I definitely love orzo and always forget how easy it is too cook. I'm going to incorporate it into my dishes next week. What and easy and great recipe to make!
That looks amazing! I totally agree with substituting asparagus out for green beans, I think they could add better flavors to the dish. I am a huge fan of any type of pasta so I will definitely be trying this the next chance I get!
