Search Pinterest using the term "smokies" and you will find a million and one recipes for the little appetizers in several hundred different variations of the same three recipes.
Except for one! I stumbled on this Crock Pot Lit'l Smokie Potato Soup.
Intrigued, I added it to this month's menu, and eagerly looked forward to making it. Little Smokies are delicious, and, of course, potato soup is always yummy on a cold winter's night.
This is a very easy soup that requires little else in the way of work other than peeling and chopping potatoes, and chopping the smokies. All the other ingredients are pretty much of the dump and go variety. I used frozen corn in place of canned, and the little smoked sausages instead of little hot dogs.
The end result was very good. Rich flavor in the broth and the right balance of other ingredients. Once again, I'm looking forward to enjoying leftovers!
